So many of us today want something rich, creamy and sweet, but we don’t want gluten or excessive carbs. Coco Peach Pie made with coconut milk and XyloSweet is the answer without the sugar and the crust. This recipe can be used for a pie filling or just a luscious adventure all on it’s own.

Ingredients

2 C fresh peaches (chopped)

1C coconut milk

1t grated ginger

1 lime(juiced)

3 t+ XyloSweet

1 ½ T arrowroot

3 T water

1-2 T Anovite Colostrum6 (optional)

pinch of salt

pinches of clove and/or nutmeg (optional)

Method

Combine peaches, coconut milk, ginger, lime, colostrum, XyloSweet, salt and spices in a saucepan. Bring to a simmer and let cook until peaches are soft. Mix arrowroot with the water and add to the mixture. Cook for a few minutes until the mixture thickens. Remove from the heat and serve or chill to serve cold. Top with coconut flakes, walnuts or anything else your heart desires!
