What you'll need:

1 lb salmon
1 T coconut oil
1 t smoked paprika
1 t salt
1/2 t freshly cracked pepper
1 C maple syrup

Method

*Preheat oven to 350°F
*In a cast iron skillet, place the tablespoon of coconut oil on high heat. When the oil is hot, carefully put the salmon skin side down to sear for 5 minutes.
*Flip the salmon to sear on the other side for 3 minutes
*Once seared, flip the salmon one more time so that the skin is on the bottom.
*Keeping the salmon in the skillet, place in the oven for 20 minutes
*Right before the salmon is ready, remove and drizzle the maple syrup on top of the salmon evenly
*Place the salmon back in the oven making sure the oven is now set to broil, meaning the heat is coming from the top grills
*Make sure to baste the salmon once or twice before removing
* Keep in mind, salmon may be in the oven for an additional 5-6 minutes to complete

Feel free to serve over mashed potatoes, couscous or a side of grilled asparagus.
