When I first began giving cooking classes, I would start by serving warm chickpeas, also known as garbanzo beans, with coconut oil, salt and pepper.

That’s it. Nothing else.

People raved. There are just some things that go with coconut oil, and chickpeas is one of them. In this dish all you need to do is open a can of chickpeas, warm them and top with coconut oil, salt and pepper. I thought that chopped red peppers would go with this simple dish, and I was right. Could it be that simple? Yes, delicious and satisfying too.

ingredients


1 can of chickpeas

1T Barlean's Coconut Oil

1/4C chopped real peppers

sea salt and pepper to taste

method

Warm chickpeas. Top with Barlean's Coconut Oil, red peppers, salt and pepper. Enjoy!
