Mango Avocado Hand Rolls

4 hand rolls

2 full pieces of soy paper-­cut in half
1 cup of brown rice
1 tablespoon of rice vinegar
1 teaspoon of sesame oil
1 teaspoon of sea salt
½ cup of sliced red bell pepper
½ of an avocado, sliced
½ cup of enoki mushrooms
½ cup of cilantro
½ cup of sliced and peeled Persian cucumber
½ cup sliced mango

Mix prepare brown rice with sesame oil, vinegar and sea salt. Let rest at room temp. With one half sheet of soy paper, ball ¼ cup of rice mixture and rest and press into corner of soy paper. Top with mushroom, avocado, bell pepper, cilantro, cucumber, and mango. Begin fold and tuck mixture in paper until a full cone is formed. Repeat with 3 more rolls. Serve with soy sauce, wasabi, or miso dressing.
